Hi, I'm Nicole.
I'm a 25+ year vegetarian, and the cook behind Delicious Everyday, where we share an endless supply of vegetarian and vegan recipes that are sure to make every day delicious!
I'm also the author of the popular cookbook, Weeknight One-Pot Vegan Cooking, and the creator of the Veggie in 30 Days Program.
I've been honored to have my recipes featured on media such as Buzzfeed, Huffington Post, iHeart Media, Good Housekeeping, Shape, Delish, and Country Living. I've even had the chance to cook some of my recipes as a guest on a TV show!

Who am I?
I've been passionate about food for as long as I can remember. I made the choice to become a vegetarian at a very young age, just 12 years old! It was an easy transition for me.
But I lived in a family full of omnivores, and finding vegetarian or vegan food at a restaurant 25+ years ago was an impossible feat. I learned quickly that if I wanted to eat great food, I would need to learn how to make it myself!
I love creating dishes that show everyone how easy and rewarding it can be to "go veggie".

I'm based in sunny Florida, where I live with my husband, rambunctious five-year old son, and two big, goofy dogs.
I've spent most of my career in the corporate world, working in marketing for several major brands. I love working with brands and businesses to help create their vision with food.
And I love animals (hence the vegetarian thing). I have two lovable dogs, one who has been my baby since long before my real baby came along. Oh - and I grew up riding horses, working in a therapeutic riding center, and continue to be involved in horse rescue in my local community.
I'm an avid photographer. Before coming to Delicious Everyday and delving into food photography, I focused on travel and nature photography, and have been fortunate to have my work exhibited throughout the Atlanta and Tampa Bay areas.
I'm a bit of a travel addict. And the first thing I do after booking a trip, is figure out where I am going to eat! In the past couple years, my travels have taken me through Spain, Greece, Italy, France, India, and Thailand. I share my travel experiences over at my travel blog, Wandertooth.
And I share more easy family recipes, including my husband's omnivorous creations over at All She Cooks.
What can you expect from Delicious Everyday?
At Delicious Everyday you'll find recipes that are vegetarian, often vegan, and occasionally gluten-free.
I like to focus on fresh whole foods. (Although I'm a Mom of a toddler, so I admit to cheating sometimes!)
I guide the everyday home cook - like me - to create delicious vegetarian and vegan meals with practical and approachable recipes.
I cook food that I love, and that I would want to share with my own family and friends.

Thank you so much Chez 😀 I agree with you on the seasonally mismatched recipes. It's a little disheartening seeing a beautiful recipe on an overseas blog and knowing it will be another 6 months before the ingredients you need are in season to make it. I'm glad you enjoyed my links to other Australian blogs. There are some great ones there. Hopefully they inspire you 😀
