    This healing Ginger Garlic Soup is one of my favorite meals to cook on cold winter evenings. It's warm, comforting, and packed full of delicious flavors. Plus, it's incredibly easy to prepare and completely vegetarian!

    Last month, I had the opportunity to test No Yolks Noodles on the blog. No Yolks Noodles are a healthy alternative to traditional egg noodles.

    In that post, I used the No Yolks noodles to create an amazingly delicious One-Pot Thai Green Curry Noodle dish. It has quickly become one of my most requested recipes! Isn't it pretty?

    Now, many people think of egg noodles as something you use only in stroganoff or casserole.

    But I know they are much more versatile!

    So when I felt a cold coming on this week, I quickly remembered the rest of these No Yolks Noodles in my pantry, and knew they would be the perfect addition to this Ginger Garlic Soup.

    Let's Make Ginger Garlic Soup!

    This vegetarian noodle soup is incredibly simple to make in just a few minutes. Simply start off with some fresh ginger and garlic. Mince it into tiny pieces, and cook in a large soup pot for a few minutes with a drizzle of olive oil.

    Add the vegetable broth, and season to your liking with salt and pepper. Bring the broth up to a boil.

    Then, you just add the No Yolks Noodles, and cook for ten minutes. I love how these noodles stay firm and fluffy, even after cooking in the vegetable broth. Done!

    Isn't that the easiest soup you've ever made?

    If you extra time on your hands, you can always prepare you own fresh vegetable stock to make this even healthier. And when I'm feeling under the weather, I sometimes add a pinch of turmeric too!

    Ingredients

    • 3 oz No Yolks Broad Noodles or substitute a vegan noodle
    • 32 oz vegetable broth
    • 6 cloves garlic peeled and minced
    • 1 piece fresh ginger 2" piece, peeled and minced
    • 1 tsp salt
    • ¼ tsp black pepper
    • 1 tsp olive oil
    US Customary - Metric

    Instructions

    • Heat olive oil over medium heat in a large soup pot. 
    • Add ginger and garlic, and cook for 2-3 minutes until fragrant.
    • Add vegetable broth, salt, and pepper. Bring to a boil. 
    • Add No Yolks Noodles and cook for ten minutes. 
    • Remove from heat, and serve!

    Notes

    This recipe can be made vegan by using your favorite vegan-friendly noodles.
