Let’s start Monday off with a cocktail. Because sometimes Monday’s need a cocktail!

This lovely combination of Lillet, Elderflower cordial, Mint and Sparkling water is the cocktail I reach for on hot Brisbane nights, and will be the one I’ll be serving on Christmas day, which will no doubt be a scorcher if previous years are anything to go by!

Welcome guests this holiday season with this lovely aperitif as it makes a lovely light change from champagne and strong heavy cocktails.

Ingredients

  • 45 ml Lillet Blanc
  • 20 ml Elderflower Cordial
  • 100 ml sparkling water
  • ice
  • 4 leaves mint plus a small sprig to garnish
US Customary - Metric

Instructions

  • Place the mint leaves between your hands and clap them together to release the mint oil. Place all of the ingredients in a glass (or jug if doubling, tripling or quadrupling the recipe) except for the sprigs of mint. Mix to combine and serve with a sprig of mint.
