    1. Preheat the oven and line a baking sheet.
    2. Roll out puff pastry and place on the baking sheet.
    3. Brush pastry with oil, then top with sliced tomatoes.
    4. Brush tomatoes with oil, and season as directed.
    5. Fold in edges and bake as directed.
    6. Sprinkle with basil and serve.

    Thaw Puff Pastry

    If you are working with frozen puff pastry, let it thaw before you lay out on the pan. This will keep it from breaking and cracking.

    When you pick tomatoes aim for ripe ones. Ripe tomatoes will give your tart a nice sweet flavor along that pairs nicely with the herbs and seasonings. Additionally, make sure to place the tomatoes cut side down on the puff pastry to preserve more of their flavor!

    Flavoring Puff Pastry

    Feel free to use different spices and herbs to create different flavor components for your tart. Even everything-but-the-bagel seasoning could be delicious on this tart!

    Vegetables

    Feel free to add other vegetables to your tomato tart. Sliced zucchini, onions, etc. are all delicious options! Just cut your vegetables small enough that they will cook down in the oven.

    How should I store leftover tomato tarts?

    If you don't eat all of your tart right away, you can store it in the fridge for up to 2 days. You will find that your tart can become soggy as the tomatoes release their juices. Because of this, your tart will be best eaten fresh—but will store for a few days in the fridge if needed.

    Can I use different types of tomatoes?

    If you don't have small tomatoes, you can easily swap them out for slices of full-size tomatoes. Simply lay the slices down on the puff pastry and bake the same. Just make sure to thinly slice the tomatoes.

    How can you reheat a tomato tart?

    To reheat, you can simply warm up your tart in the microwave, or you can reheat it in the oven. For the oven method, place the tart on a baking sheet, set the oven to 350°F, and heat the tart for 5–7 minutes or until warmed through.

    Ingredients

    • 1 puff pastry thawed from frozen
    • 2 tbsp olive oil divided
    • 1 pint baby tomatoes halved
    • 1 tsp oregano
    • salt and pepper to taste
    • fresh basil leaves optional

    Instructions

    • Preheat oven to to 400°F and line a baking sheet with parchment paper.
    • Add the puff pastry to the lined baking sheet. (I buy mine pre-rolled, but if you need to roll it, then roll into a small rectangle.)

    • Brush the puff pastry with olive oil, then add the tomatoes cut side down to the pastry.

    • Brush the tops of the tomatoes with olive oil, then sprinkle with oregano, salt, and pepper.
