    Hand Mix

If you don’t like your cookies too dense, combine the wet and dry ingredients with a spatula—after you cream the butter and sugar with an electric mixer.

But if you don’t want to use an electric mixer at all, you can cream the butter and sugar with a pastry cutter. If you don’t have a pastry cutter, you can cut through the butter with two knives.

    Variations

    Vegan Butter Substitute

Don’t have any butter in the house? There are a couple substitute ingredients you can use instead.

You can substitute butter with coconut oil (1:1 ratio), with applesauce (1:1 ratio), with mashed bananas (1:1 ratio), or with pumpkin purée (3:4 ratio).

Just remember that replacing vegan butter with something else can add an extra flavor to your cookies.

    Types of Chocolate

If you’re not a fan of dark chocolate chips, you can replace them with other yummy treats.

Instead of dark chocolate, try milk chocolate chunks, semi-sweet chocolate chips, or white chocolate.

If you don’t like chocolate, or you want to add something extra to the chocolate, then you can add raisins or toffee.

    Adding Candy

For these oatmeal cookies, you can also add some candy inside the cookie dough—something yummy like peanut butter cups.

You can also add candy on top of the cookies. If you do this, make a small indent on the top of the ball of dough and place the candy in the indent. Great candies for this option include Hershey’s Kisses and pieces of caramel.

    Gluten-free Cookies

To make these cookies gluten-free, switch out the all-purpose flour for almond flour.
