Preheat the oven to 350°F. Cook the pasta based on the directions included with the box then drain.
In a saucepan, heat your coconut milk, garlic, salt, and pepper. Bring to a simmer and let cook for about a minute. This should take about 5 minutes total.
Add about half the shredded cheese to the warm coconut milk mixture and stir until melted.
In a large bowl, combine the pasta and cheese mixture and mix well.
Pour the pasta mixture into a 3-3.5-quart casserole dish and spread even. Top with the rest of the vegan shredded cheese and bread crumbs.
