I thought it was time I introduced you to my favourite cocktail. The Cucumber and Elderflower Collins.

The first time I had a Cucumber and Elderflower Collins was when I dined at Berardo’s in beautiful Noosa, and it was love at first sip. It has a little bit of everything I love. It is delicate, floral and oh so refreshing on a warm summer evening.

You can get fancy and break out the cocktail shaker if you like, but really it’s not necessary. Simply shave long slivers of cucumber (a peeler works best) and swirl around your glass. I like to use a highball crystal glass, but feel free to use your favourite glass. Add the elderflower cordial and your favourite gin to the glass. I like Bombay Sapphire but Gordon’s is wonderful too. Top with ice and soda water and stir well to combine. A sprig of mint is a beautiful finish however if you don’t have any it isn’t necessary, although I think it does add another wonderful dimension.

You can also easily scale this recipe up to make a big pitcher to share at your next dinner party of bbq.

Ingredients

  • cucumber strips
  • 30 ml gin
  • 15 ml elderflower cordial
  • ice
  • soda water
  • sprig of mint optional
US Customary - Metric

Instructions

  • Use a peeler to peel long strips of cucumber. Swirl around a highball glass. Add the gin and elderflower cordial, add ice and top soda water. Stir well. Add a sprig of mint to serve.

Notes

To make a large jug multiple this recipe by 6. Keep refrigerated and add the ice and mint just before serving.

    Love the look of the cucumber- makes it look so fancy! (they’d probably charge you heaps for that at a bar!) I’m usually too lazy to make myself a cocktail- I usually just throw together some liquor and whatever soft drink I have in the fridge haha….but this sounds really good!! Might have to get myself some elderflower cordial!

      You can pick up elderflower cordial at Coles (it is called BottleGreen), Ikea or gourmet food stores. I hope that helps. 😀
