In a large glass or plastic container, combine the vodka, apple slices, cinnamon stick, star anise, cardamom, cloves, nutmeg, and ginger.
Place in the fridge for 48 hours. Shake the container a couple times throughout the 48 hours, to help the flavors combine.
Once all the flavor is infused into the vodka, strain the mixture into a clean container using a fine mesh sieve or cheese cloth.
Combine the sugar with ½ c/120ml water in a medium saucepan over medium heat. Stir until the sugar is dissolved. Bring to a simmer and cook for just 30 seconds. Remove from the heat and allow the sugar mixture to cool. You’ve made a simple syrup!
Add ½ c/120ml of simple syrup to the infused vodka and vanilla extract and stir until well combined.
Store in a sealed glass container in the fridge for up to 2 weeks.
Use a sweet and flavorful variety of apple—like gala, fuji, or Braeburn.
You can use any remaining simple syrup for mixing cocktails—it’s perfect for mojitos!
